In grad school I worked at a smoothie shop for supplemental income, so I’d say that I’ve got pretty high standards when it comes to smoothies! This is my favorite one I’ve made (it’s filling, the consistency I like, and delicious) and is full of antioxidants from the blueberries (and extra nutrients from the hidden spinach)!
- 1 cup frozen blueberries
- 1 ripe banana (frozen if you want a thicker smoothie)
- handful of spinach
- 1/2 cup unsweetened non-dairy milk
- 1 tbsp unsweetened natural peanut butter (or your favorite unsweetened nut butter or tahini)
- optional toppings for texture: cacao nibs, hemp seeds
Whip all ingredients (except toppings) into a blender. Pour into a glass of choice and add your favorite toppings if desired!
