Oven roasted delicata squash, so simple but so good! Slightly crispy on the outside, soft on the inside, and so naturally sweet 😍I buy my delicata squash from @traderjoes because they regularly have it in stock and it’s so cheap, only $1 each! I normally cook a few delicata squash at the time because they get eaten so quickly at my house.
Roasted Delicata Squash
•Heat oven at 425 F
•Cut ends off of one whole delicata squash. Slice in half lengthwise, scoop out pulp, and cut in thin slices (keeping the skin on). The seeds are edible if you’d like to repurpose them, I just prefer not to.
•Toss delicata slices in a bowl with 1 tbsp olive oil.
•Put delicata slices on a baking tray lined with parchment paper and cook in oven for 35 min, flipping half way.
•Add salt and pepper if you like and enjoy!
