I often find myself either having a ton of ripe avocado at home (and not knowing what to do with it) or not having any avocado, and recently I found myself with a surplus of ripe avocado. I was thinking about something creative I could do with the ripe avocado that was a dessert (I had already had three heavy meals and plenty of leftovers) and came up with this DELICIOUS chocolate avocado pudding.
