It’s peach season right now and I’ve been LOVING it. Nothing is better than a juicy peach on it’s own in the summer, but I’m also loving it in dishes from salads to oatmeal, and this is by far the best version i’ve had of peaches in oatmeal! Peaches and Cream Oatmeal
Recipe, serves 2 3
INGREDIENTS
- 1 cup rolled oats
- 1 3/4 cups
@almondbreeze almondmilk,original or vanillaor unsweetened almond milk - 2 peaches, diced (or 1 large nectarine)- potentially more for topping
- 1 tbsp coconut oil
- 1/3 cup
non-dairyyogurt (I like fage 2%) - 1 tsp vanilla extract
- 1 tsp cinnamon
- 3 tbsp maple syrup
- Pinch of salt
INSTRUCTIONS
- In a medium saucepan, sauté the peaches in coconut oil and cinnamon on medium heat until soft, for about 5 minutes. Add in the oats, milk, pinch of salt, maple syrup and vanilla and bring to a boil.
- Reduce heat to let simmer until the oats start to absorb the milk, stirring every few minutes (for about 10 minutes)
- Divide among two bowls and top with a few tbsp of yogurt & cinnamon (and additional sliced peaches)
