These sweet potato rounds are delicious by themselves as a snack or side dish, but are also versatile. Can be used instead of bread for vegan black bean burgers, or top with guacamole or avocado mash (mashed avocado and lime juice) and microherbs as an appetizer.
Roasted Sweet Potato Rounds
- 3 medium sweet potatoes
- 2 tbsp Olive oil
- Salt and Pepper
- Preheat oven to 400 F
- Scrub sweet potatoes and cut rounds into 1/4 inch slices
- Place sweet potato rounds in a medium bowl and toss with olive oil.
- Line a baking sheet with parchment paper. Place sweet potato rounds in a single layer on parchment lined baking sheet and bake in oven for 20 min (or until it reaches your desired level of crispness).
