Chia pudding has many nutritional benefits, and I love a good chia pudding recipe! Loved this one because it gets a pinkish color and natural sweetness from the strawberries.

Strawberry Chia Pudding
Makes 1-2 servings
- 1 cup coconut milk
- 1/4 cup chia seeds
- 1/4 tsp vanilla extract
- 1/2 cup frozen or fresh strawberries
- 1 tsp cacao nibs (optional)
- Toppings of choice: peanut butter or hemp seeds (protein to keep you full), fresh fruit of your choice, a drizzle of maple syrup, agave or honey for extra sweetness (optional)
Blend all ingredients together except chia seeds. Mix chia seeds into blended mixture. Top with your favorite toppings.
