I bought nutritional yeast for another vegan cheese recipe (which I did not like) and was looking for recipes to use the rest of my nutritional yeast. I love roasted cauliflower, so I was excited to try this recipe for Cheesy Vegan Roasted Cauliflower from the Roasted Root. I didn’t have paprika, and was also too lazy to use one large head of cauliflower, so I used a bag of chopped cauliflower and slightly adjusted the original recipe from Roasted Root according to what I had at home.
Cheesy Vegan Roasted Cauliflower
INGREDIENTS
- 1 bag cauliflower florets
- 2 tablespoons olive oil
- 2 tablespoons nutritional yeast
- ½ teaspoon sea salt to taste
- 1 teaspoon barbecue seasoning (or use paprika instead)
INSTRUCTIONS

Preheat the oven to 415 degrees F and line a large baking sheet with parchment paper.

Add the raw cauliflower to a large mixing bowl. Drizzle with olive oil, and sprinkle with nutritional yeast, sea salt, and barbecue seasoning. Toss and mix everything together until the cauliflower florets are well-coated.

Spread the cauliflower over the prepared baking sheet and roast on the center rack for 30 to 40 minutes, stirring half-way through, or until cauliflower is golden-brown and tender.

Remove from the oven and taste cauliflower for flavor. Sprinkle with sea salt and additional nutritional yeast if desired.
