I love anything made with sweet potato and crispy, so I knew I couldn’t go wrong with these Crispy Sweet Potato Sticks.
I didn’t peel the sweet potato, since most of the nutrients are contained in the peel. However, you could always peel the sweet potato if you don’t like eating sweet potato peels.
I used the grater blade insert for my Braun FP3020 12 Cup Food Processor to make the crisps, but you could also juliene the sweet potato using a juliene peeler.
Here’s how I made these
Crispy Sweet Potato Sticks
- 2 medium sweet potatoes
- 2 tbsp coconut oil (melted)
- sprinkle of coarse salt
- Mix sweet potato, oil and salt until sweet potato fully coated. Put on baking tray and cook for approximately 50-60 min at 350F until crispy.
These were delicious on their own, with ketchup (my favorite is an Israeli brand called Osem), and as a fun, crunchy addition to a salad.
