Fresh Spring Rolls

FRESH SPRING 🌺ROLLS, the perfect seasonal snack! I found rice paper at Whole foods (they even have a brown rice paper option). Here’s how I made it:

Spring Roll Ingredients:

  • Fruit of choice (sliced mango, sliced strawberry or blackberries)
  • alfalfa sprouts
  • chopped cilantro (optional since there are plenty of people averse to it)
  • chopped mint
  • chopped basil
  • fresh shredded carrots
  • sliced purple cabbage
  • bean sprouts
  • rice paper

Spring Roll Instructions:

  1.  Dip rice paper in warm water for 15 seconds (until soft), fill with your favorite ingredients and roll like a burrito 🌯


Peanut 🥜 Ginger Dipping Sauce (recipe from Alpha Foodie):

  • 1/3 cup natural peanut butter
  • 1 tbsp soy sauce
  • 1/2 tbsp of lime juice
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • dash of hot water until thin, add more if needed
  • topped with chopped peanuts
