FRESH SPRING 🌺ROLLS, the perfect seasonal snack! I found rice paper at Whole foods (they even have a brown rice paper option). Here’s how I made it:
Spring Roll Ingredients:
- Fruit of choice (sliced mango, sliced strawberry or blackberries)
- alfalfa sprouts
- chopped cilantro (optional since there are plenty of people averse to it)
- chopped mint
- chopped basil
- fresh shredded carrots
- sliced purple cabbage
- bean sprouts
- rice paper
Spring Roll Instructions:
- Dip rice paper in warm water for 15 seconds (until soft), fill with your favorite ingredients and roll like a burrito 🌯
Peanut 🥜 Ginger Dipping Sauce (recipe from Alpha Foodie):
- 1/3 cup natural peanut butter
- 1 tbsp soy sauce
- 1/2 tbsp of lime juice
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- dash of hot water until thin, add more if needed
- topped with chopped peanuts
