Southwestern Tacos with Lentil Walnut Meat

Made these southwestern tacos after making this recipe of Lentil Walnut meat from Vegan Heaven. The lentil walnut meat was a hit, even with my carnivorous family members! I love this lentil walnut meat recipe because it is versatile to cook with and is healthy and delicious.

Feel free to make your own revisions based on your favorite taco toppings! For example, you could totally use lettuce wraps if you wanted to make the tacos even more nutritious. 

Here’s how I made mine:

  1. Make homemade lentil walnut meat
  2. Warm corn tortillas in a skillet
  3. Add lentil walnut meat, queso (you can find a vegan version if you are dairy-free) corn, red cabbage, sliced avocado, chopped purple cabbage, mango peach salsa, lime juice and chopped cilantro

I also used this recipe to make a taco salad to enjoy for lunch the next day
