DIY Spring Rolls

The perfect healthy snack/appetizer that’s great for guests!

Only made this DIY because I didn’t know what my guests wanted inside their spring rolls. I wanted to make these with rice paper, but because my local grocery store didn’t have them (calling you out Publix), I decided to make these spring rolls lettuce wraps using butter lettuce.

Here’s how to do this yourself:

Set a platter with your favorite ingredients. I included:

  • Alfalfa sprouts
  • Cilantro
  • Bean sprouts
  • Freshly shredded carrots
  • Purple cabbage (sliced)
  • Persian cucumber (sliced)
  • Mango (sliced)
  • Mint (sliced)
  • Basil (sliced)
  • Cherry tomatoes (halved)

I served this with a Peanut Ginger Dipping Sauce (recipe from Alpha Foodie). I didn’t have sesame oil so I didn’t include that part, but even without the sesame oil her recipe tasted great. Here’s what she combined to make the sauce:

  • 1/3 cup natural peanut butter
  • 1 tbsp Soy sauce
  • 1-2 tbsp of lime juice
  • 1 tbsp of honey
  • 1/2 tbsp freshly grated ginger 
  • 1 tbsp sesame oil
  • dash of hot water to thin, add more if needed. Garnish with crushed peanuts (optional)
