The perfect healthy snack/appetizer that’s great for guests!
Only made this DIY because I didn’t know what my guests wanted inside their spring rolls. I wanted to make these with rice paper, but because my local grocery store didn’t have them (calling you out Publix), I decided to make these spring rolls lettuce wraps using butter lettuce.
Here’s how to do this yourself:
Set a platter with your favorite ingredients. I included:
- Alfalfa sprouts
- Cilantro
- Bean sprouts
- Freshly shredded carrots
- Purple cabbage (sliced)
- Persian cucumber (sliced)
- Mango (sliced)
- Mint (sliced)
- Basil (sliced)
- Cherry tomatoes (halved)
I served this with a Peanut Ginger Dipping Sauce (recipe from Alpha Foodie). I didn’t have sesame oil so I didn’t include that part, but even without the sesame oil her recipe tasted great. Here’s what she combined to make the sauce:
- 1/3 cup natural peanut butter
- 1 tbsp Soy sauce
- 1-2 tbsp of lime juice
- 1 tbsp of honey
- 1/2 tbsp freshly grated ginger
- 1 tbsp sesame oil
- dash of hot water to thin, add more if needed. Garnish with crushed peanuts (optional)
