Butternut Squash Noodle Nests

It’s Art Basel week in Miami, and so I decided to make this work of art to celebrate!

I used this recipe for Butternut Squash Noodle Nest from TheCuttingVeg featured on feedfeed and absolutely loved it! These nests were not only beautiful, but also delicious!

A few recommendations based on my experience.

  1. I’d add 1 1/2 cup or 2 cups of spiralized butternut squash noodles instead of 1 cup. I found that I wanted more butternut squash noodles around my nest, and they tasted delicious! There’s definitely enough butter in the recipe to accommodate for more spiralized noodles.
  2. I was impatient and flipped my nests to cook the whites faster. I wouldn’t recommend doing this, as it makes the egg yolks look less beautiful! I think that if you made larger nests (which you could do with more spiralized noodles) the egg would cook faster since the whites would be more spread out.
  3. I was inspired by TheCuttingVeg’s plate decoration and decorated my plate similarly with arugula, cherry tomatoes, avocado, fresh dill, and Everything But the Bagel seasoning.
