Burrata Pizza with Cauliflower Crust

Ingredients:

  • 1/2 medium onion, chopped
  • 2 garlic cloves, minced
  • Olive oil spray
  • 1 1/2 lb Burrata cheese
  • 1/2 cup of basil leaves (I didn’t have basil leaves, so I used ready made pesto instead)
  • olive oil (for drizzling)
  • 20 cherry tomatoes (sliced in half lengthwise)
  • 1 tbsp Red pepper flakes
  • Cauliflower pizza crust (I used Trader Joes)

Instructions:

  1. Follow instructions to cook cauliflower pizza crust
  2. Spray pan with olive oil on medium heat and cook chopped onion and minced garlic until onions are translucent. Add cherry tomatoes and wait until roasted before taking off heat .
  3. When pizza crust is ready, top with fresh burrata cheese, roasted tomatoes, and a drizzle of olive oil. Garnish with the fresh basil (or pesto in my case) and enjoy with a sprinkling of red pepper flakes
